LEMON PARFAIT

INGREDIENTS:

    • 1 qt. vanilla low-fat yogurt
    • 3/4 cup lemon curd, prepared
    • 1 1/2 cup graham crackers, crushed
    • 3/4 cup toasted coconut
    • Whipped topping

DIRECTIONS:

    1. Place six 10-oz. parfait-style glasses on a clean work surface. Into each parfait layer:
    2. 1/3 cup yogurt
    3. 2 Tbsp. lemon curd
    4. 2 Tbsp. crushed graham crackers
    5. 1 Tbsp. coconut
    6. Repeat process and serve.
